1. Lemon Chicken, Pasta and Broccoli
Ingredients: Chicken tenders, 1 lemon, 1 garlic clove, flour, red pepper
Directions: Rinse chicken, pat dry, salt and red pepper each side, dust in flour, heat canola oil in a frying pan, add chopped fresh garlic sauté for a minute or two and add chicken, cook 3 – 4 minutes on each side, squirting fresh lemon juice as the chicken cooks. Boil any style of pasta you like and steam the broccoli, and voila!
2. Broiled Salmon with Baked Potatoes and Asparagus
Directions: Place salmon in a dish, baste with olive oil over top, salt and pepper, and broil for 10 – 15 minutes. Center should be light pink and fish should flake off with a fork. Wash the potatoes and throw them in the oven before the salmon for 45 minutes, baking at 400 degrees. Steam the asparagus and add olive oil or butter with salt and pepper to taste.
3. Tomato Salad, Spaghetti and Meat Sauce
Ingredients: Plum tomatoes, 2 cloves of garlic, fresh basil and olive oil. Chop, dice and mix! Serve with Italian bread. Main Course: Spaghetti, 1 lb. ground sirloin, green pepper, onion, 1 clove of garlic, 1 can marinara sauce.
Directions: Brown Sirloin in pan, add chopped garlic, green pepper and onion, when meat is cooked add sauce and simmer for 15 minutes. Add the spaghetti and Buon Appetito!
4. Herb Crusted Pork Chops with Rice and Zucchini
Ingredients: Pork Chops, Rosemary, minced garlic, thyme, oregano, olive oil, salt and pepper.
Directions: Baste chops with olive oil, sprinkles herbs on each side, bake in oven for 30 minutes and 350 degrees. Prepare with Rice and Steamed Zucchini, Butter/Olive Oil and salt and pepper to taste.
